The Incredible Egg

I had the opportunity to try local duck eggs from Lanoue Gardens

Have you ever had duck eggs? This was my first experience and I enjoyed them! I did not notice much of a taste difference, although some say they can tell a little.

Duck eggs will give more vitamin A, B12, potassium, magnesium and choline(found in the yolk, our brain needs this nutrient to regulate many processes including memory, mood and muscle control) to name just a few. 

Chicken eggs are still a fantastic option and they are a staple in our house. My fourteen year -old has become quite the master of using a cast-iron skillet with eggs, fried onions and bacon.

Eat the yolk! Chicken or duck, the vitamins and minerals are in the yolk. The combination of fat and protein will help keep you full longer.  

When you are full longer, that means less snacking. Less snacking means steady blood sugars for all of us….that is the GOAL! Steady blood sugars mean fewer cravings. 

Fry, hard boil, poach or scramble your duck or chicken eggs and include your favorite veggies and extra meat if you have it available. An egg bake is always nice for leftovers. My egg bake pictured was easy and gave two servings of leftovers. 

I used cooked hamburger leftover from protein prep, another reason to cook your protein in large batches. I browned six pounds of beef the last time was prepping. You can do more too, just divide and freeze.

Create your egg bake to your family’s liking. If you do not like meat, veggies or onions in it, that is ok! Use the amount you have on hand or more if you would like. Eggs and cheese will still taste great and are perfect for any meal. I did not add any milk/cream to this. Many recipes call for it, so if you prefer add 1/2-3/4 cup of heavy cream, coconut milk or almond milk.

Easy Egg Bake

12-14 eggs (depending on size)

1 pound meat (cooked hamburger, sausage or bacon bits-just 1/2 -1 cup if using bacon bits) 

1/2-1 C cheddar or Colby Jack cheese

1 C red onion (we all like onions)

1/2 tsp salt (or to taste)

Pepper to taste

Whisk eggs and salt/pepper (and cream/milk if using). Pour mixture into greased 9x13 pan. Sprinkle meat, onions or any veggies on to eggs. Top with cheese and bake at 350 for 20-25 minutes.
